Pumpkin Oatmeal Smoothie

I have really been on a kick lately with trying out new recipes and today I found another winner. I adapted the Healthy Pumpkin Oatmeal Shake recipe from Gina's Skinny Recipes (my absolute favorite food blog!) and came up with a Pumpkin Oatmeal Smoothie that is delicious as well as healthy. Besides adjusting the ingredient amounts to create a single serving, I also omitted the ice. I have a single serving size smoothie blender and while I put frozen fruit in it every day, I'm a bit wary of whether it would actually blend ice. I found that omitting the ice created more of a smoothie consistency which is exactly what I was looking for in the morning. Who needs pumpkin spice lattes when you can have a pumpkin smoothie?!

Pumpkin Oatmeal Smoothie
Makes 1 large serving

1/4 cup quick oats
1 cup water
1/2 cup almond milk (I used unflavored but I'm sure vanilla would be delicious!)
1/4 cup canned pumpkin
1.5 tbsp brown sugar
2 tsp cinnamon
1 tsp pumpkin pie spice

Prepare the quick oats and water according to instructions, typically this will mean microwaving it for 1-2 minutes or heating on stove top. Set aside and let cool. Add almond milk, pumpkin, brown sugar, cinnamon, and pumpkin pie spice to blender. Mix on high. Add oatmeal and blend until smooth. Chill in refrigerator and serve cold.
