Enjoying a Light and Relaxing Evening with Michelob Ultra

Y'all probably remember that I checked in recently regarding my 2018 healthy living goals and today was one of those days where I felt like I was really crushing it when it comes to taking care of myself. I started my morning with an early morning power walk – on the treadmill at a steep incline for those glutes! – then went to barre after work followed by a late yoga class. I began my day with oatmeal, ate the right snacks, added in plenty of fruits and veggies, but there has to be balance among it all.


Most nights, I'm home from working out by 7:30 PM or so and the main priority is cooking something quick and healthy so that I can start working on the blog and freelance projects. But sometimes, especially if it's a Friday night or a particularly nice evening, I want to kick back and relax a bit after I get home from working out. I want a little bit of a splurge – but within reason. One that won't set back the strides I've made in healthy living.

I whipped up this meal with leftovers that I'm trying to use up before heading out of town and it turned out deliciously! Since we've been working on eating healthier, most of what is in our fridge works into that mindset and that means even a pantry meal isn't so bad. I sautéed onions, tomatoes, orange bell pepper, and yellow bell pepper, added a bit of sausage, tomato sauce, and hot sauce, then cooked some rice as a base. In an ideal world, I would have used cauliflower rice rather than regular rice, but, as I said, this was an easy pantry meal so I worked with what I had! I seasoned the pot of veggies, rice, and meat with chili powder, paprika, garlic, cumin, salt, and pepper, then let it sit over low heat to meld the flavors. A bit of avocado on top for some green and you have a perfectly yummy and oh so simple meal! Add in that Michelob Ultra and you're set for a low key night.
