A Succesful Cooking Attempt

I’m more likely to improvise in the kitchen but I do have one cookbook that I swear by. I bought Going Solo in the Kitchen second year of college when I moved into an apartment and wanted to start making healthy meals for myself. The recipes are all simple with few ingredients, ideal for someone who doesn’t have a huge pantry of ingredients on hand.

Two nights ago, I attempted Zucchini and Red Pepper Cakes and they came out deliciously! My camera mysteriously died before I could take a picture, but they are as pretty as they are tasty.

(I modified the recipe to make more than one serving and to my tastes.)

1 cup grated zucchini
1/3 cup grated red pepper
1/3 cup grated onion
6 tbsp beaten egg
6 tbsp flour

Heat a bit of olive oil on a frying pan over medium high heat.
Combine grated zucchini, red pepper, onion, egg, flour, and pepper (I don’t like salt, but you could certainly use it) in bowl. The mixture will NOT seem like it is going to mold into cakes. (I gave up at this point and passed it along to the boy to make.) Shape the mixture into four cakes on the frying pan, this is easier than trying to shape them in your hand and transfer them to the pan. Cook for three minutes on each side. Serve immediately.
