Monday Recipe: French Toast Casserole

Given my obsessions with sweets and brunch, I’ve been dying to try making a french casserole for quite some time.  Friends visiting from Charleston was the perfect excuse to host brunch and try my hand at this delicious breakfast dish.  I adapted this from a recipe that I found on All Recipes to create a richer, more decadent casserole.

1 loaf of sandwich bread
6 eggs
2 1/2 cups milk
2 tsp vanilla extract
1/2 cup sugar

2 tbsp sugar
2 tbsp cinnamon

Preheat oven to 350 degrees.  Lightly spray bottom of 11×17 casserole dish.  Cube bread and spread evenly throughout the bottom of the casserole dish.  Mix eggs, milk, vanilla extract, and sugar.  Pour over cubed bread and let sit for 10 minutes.  Once the bread has soaked up the liquid mixture, sprinkle the sugar and cinnamon on top.  Bake for 45 minutes.  Once it is done, you will have a fluffy and moist casserole.  Dust with powdered sugar and serve with maple syrup.  Enjoy!
