Monday Recipe: Pineapple Casserole

A few years ago, my friend, and later roommate, Kelly made a fabulous pineapple casserole for a Thanksgiving themed potluck at her house. I don’t remember exactly how she made it and I have never been resourceful enough to ask her for the recipe so instead I decided to do a lot of google-ing this past Sunday when my house hosted our now annual Thanksgiving potluck. Luckily, I picked a winner and ended up with a delightfully sweet, moist casserole.

Pineapple Casserole

1/2 cup butter

1 cup white sugar

4 eggs

1 pinch cinnamon

1 pinch nutmeg

7 slices white bread, torn

1 20 oz. can crushed pineapple

Mash together butter and sugar. Add one egg at time. Add cinnamon, nutmeg, bread, and pineapple. Mix together and put in medium size casserole dish. Bake for 1 hour at 350 degrees. Enjoy!
