French Toast with Bananas and Caramel

I had the house to myself this weekend and since I didn’t have anything on my calendar until noon on Saturday I decided to make a leisurely breakfast. I’m a huge French toast fan so whenever I have plenty of time in the morning, it’s my go to. This added with a couple bananas I had on hand meant that French Toast with Bananas and Caramel would be my culinary creation of the morning. And it was delish.

1 egg
Splash of milk
1 teaspoon vanilla extract
2 teaspoons sugar
(Usually I would use cinnamon but I couldn’t find mine… it was totally fine without.)
2 slices of bread (I had some sort of multi grain bread but ideally it would be a thicker white bread)

2 bananas sliced

Mix egg, milk, sugar, and vanilla extract in a shallow dish. Dip the bread (both sides) in the mixture and throw on a medium-high frying pan. Cook until the bread begins to brown and is no longer mushy.

After you’re done making the French toast, throw the bananas on the same frying pan. Sautee until they have softened and started to brown just slightly. Pour bananas and caramel sauce over French toast.

Caramel Sauce

1 packed cup brown sugar

1/2 cup half-and-half
4 tablespoons butter
1 tablespoon vanilla extract
Heat all ingredients. Microwave for five minutes, stopping to stir every 30 seconds or so. Refrigerate to cool.
