In 2014, I’m trying to eat healthier and more intentionally. I’m aiming for more fresh produce and less desserts (for those who know me, this part may prove impossible.) This probably means I’ll be sharing more recipes on the blog in order to hold myself accountable for making healthful and delicious foods! I’m kicking this off today with my new go to breakfast. I bought a single serve blender last summer but had only used it occasionally up until now.
This past week, I’ve been fixing smoothies every morning. It only takes a few minutes and I feel like I’m starting my day off far better than if I was grabbing whatever I happened to have in the pantry or stopping at Whole Foods for a chocolate croissant (whoops!). While I’ve been trying all sorts of combinations, here’s my favorite thus far.
1 banana (keep your bananas in the fridge because a room temp banana makes for a room temp smoothie!)
1/4 cup blueberries
1 large handful baby spinach
1/3 cup coconut almond milk (I use Almond Breeze)
1/4 cup orange juice
Blend until smooth. Serve chilled. Enjoy!
