Grilled Cheese is one of those comfort foods that you can either make with the simplest ingredients or jazz it up with all sorts of additions. While I am certainly not picky when it comes to my grilled cheese, I do have one go to dressed up version that I can always rely on when I’m in the mood for an unbelievably rich but simple meal.
Barbeque Grilled Cheese
2 slices thick cut bread
1/4 cup sliced onion
1/2 tsp. sugar
1 tbsp. barbeque sauce
Cook the onions with EVOO and sugar over medium-low heat until golden and caramelized. Butter both sides of the bread on the outside and layer the cheese, onions, and barbeque sauce. Drizzle a little more EVOO on the skillet and throw that sandwich on there! Cook over medium heat until browned on both sides and cheese is melted through. Serve hot and enjoy!
