Easy Basil Pesto with Dorot

Between work, grad school, squeezing in a daily ClassPass workout (they’re running a deal right now!), blogging, Junior League, traveling what feels like every other weekend, and trying to be social on occasion, time is definitely at a premium at the moment and more often than not I barely have time to make a sandwich, much less cook an elaborate meal. 

Using Dorot herbs is a lifesaver when I want to throw together a pantry meal. I pick them up on my weekly run to Trader Joe’s and keep them in the freezer—they are perfect for having on hand to together a quick dinner. On this particular day, I wanted to make a basil pesto but definitely didn’t have time to run out and get fresh basil. 10 cubes of Dorot chopped basil, 2 cubes of garlic, 1/2 cup of pine nuts, and a cup of olive oil later and I had a delicious pesto sauce. I added some chopped chicken, thin spaghetti that I had on hand, and a few shavings of parmesan for a meal that seemed like I had actually planned to cook.
