Holiday Breakfast in a Pinch

While Christmas lunches and dinners normally get all the attention, it’s Christmas breakfast that’s my personal favorite. I almost never have time for leisurely breakfasts, even on the weekends, so Christmas day is the perfect excuse to bake all of those wonderful breakfast treats that there just never seems to be a minute for on a normal day.

One of my go to breakfast treats is banana muffins. They’re so simple to make, so delicious, and when do I not have way too ripe bananas sitting around?! Add chocolate chips and they are taste just a bit decadent without adding too much to the holiday sugar coma. Plus, you can get all of these ingredients at your local Giant!

Chocolate Chip Banana Muffins

3 ripe bananas
1 egg
1/3 cup almond milk
1/2 cup granulated sugar
1/2 cup brown sugar
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips

You can get all of these baking ingredients from Giant!

Preheat oven to 350 degrees. Line 12 muffin tin with cupcake liners or spray lightly with cooking spray.  
Mash bananas in large bowl until smooth. Mix in egg, almond milk, brown sugar, and granulated sugar. 

In medium bowl, combine flour, baking soda, and salt. Slowly add to wet mixture and stir carefully until evenly mixed. Fold in chocolate chips.

Bake for 20 minutes, until a toothpick inserted in the center comes out clean. Let cool.
