We had our first hint of semi-nice weather this past weekend and it has everyone itching to get outside. Despite a more than slight breeze, Adam and I were up on our rooftop Friday evening before dinner having a few cocktails and soaking up every second of sun we could. And, with hopefully more of these days ahead, I’ve already started looking for recipes that are perfect for a rooftop evening with friends, but that also won’t cost a ton of calories.
A HEALTHY WEEKEND RECIPE
Of course, one of my favorite treats for an al fresco weekend evening is guacamole. However, it can venture into splurge territory quickly, so I decided to lighten up the recipe just a bit to give you room to pair it with a nice cold beverage. I did less avocado and increased everything else so that you get the taste of avocado without all of the calories – yes, it’s basically upping the filler, but totally worth it, right?
LIGHTENED UP GUACAMOLE
1 small avocado
1 medium tomato
1/4 medium size onion
1 jalepeno
lemon juice
lime juice
1/4 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon chili powder
sea salt and pepper to taste
Chop the avocado. Dice the tomato, onion, and jalepeno. Mix together in your serving bowl. Squirt in lemon juice and lime juice to taste. Season with garlic powder, cumin, chili powder, sea salt, and pepper. Serve with celery for dipping and a beer.
