I’ve been trying to get back on the wagon after a couple months of lots of travel, lots of food, and a little less working out than usual. That means finding recipes that taste yummy, pack a lot of nutrient punch, but don’t contain a ton of added sugar or non-whole ingredients. Typically, I’ll find a recipe on Skinny Taste or Pinterest and adapt it to my own needs and whatever ingredients I have on hand, but every once in a while, I’ll come up with something totally on my own that hits a home run. That’s the kind of recipe I have for you today.
NEVER SKIP BREAKFAST
There’s no doubt I’m a breakfast person. Never one to skip my morning meal, I typically reach for overnight oats or oatmeal, but as the weather gets warmer, sometimes I like something cool, refreshing, and caffeinated to get my days started. Enter this banana coffee smoothie. It’s a creamy and delicious blend of coffee, banana, and a whole slew of good for you ingredients. From greek yogurt to get in a few probiotics to collagen powder for supple skin, flax seed for digestion, and maca powder for energy, you’re all set for your day with this powerhouse smoothie that tastes more like a dessert.
BANANA COFFEE SMOOTHIE
1 frozen banana, sliced
1 cup strong coffee, chilled
Splash of almond milk or coconut milk
1/4 cup plain unsweetened greek yogurt
1 tablespoon maca powder
1 tablespoon collagen powder
1 teaspoon unsweetened cocoa powder
1 teaspoon chia seeds
1 teaspoon flax seed
Pulse together all ingredients in blender until smooth – I use a Nutri-Bullet. Serve immediately. Enjoy an indulgent and icy blast of nutrients and caffeine!
MY OUTFIT
Since I work from home most days, athleisure is my go to. No, I don’t want to work in my pajamas, but I do want to be comfortable – so why would I wear jeans and a blazer if I don’t have to? My leggings of choice are typically Zella and this moto pair (under $30!!) is one of my absolute favorites. Paired with a workout top that I’ll likely wear to barre later and a cozy sweatshirt cardigan, I’m totally set for a busy day.
