As I’m writing this, I really wish I had a batch of these sitting in the fridge currently. I’m craving something sweet, but as we know, I have a month and a half to go until the wedding and I’m trying really hard not to break into the cookies that are staring at me from the pantry. If only I had a healthy treat on hand! And, that’s exactly why I love whipping up a batch of these Almond Butter Energy Bites. They’re easy to make, they’re delicious, and they’re a healthy alternative to what I might otherwise grab.
KEEPING HEALTHY SNACKS ON HAND
These almond butter energy bites come together in just a few minutes with ingredients you may already have in your pantry. I love to make a batch on Sunday and eat them throughout the week when I’m having a mid-afternoon sweets craving – or sometimes even for a late breakfast. I keep in them in the fridge to make sure they stay firm – but they’re totally fine if you want to bring them for lunch and they won’t be refrigerated all day.
The other great thing about this recipe? You can totally modify it to your liking. Throw in an extra superfood ingredient, omit the chocolate, sub in sunflower butter or peanut butter for the almond butter, add in nuts – whatever it is that you want, do it.
ALMOND BUTTER ENERGY BITES
1.5 cups old-fashioned oats
1/2 cup almond butter
1/2 cup honey
1/4 cup ground flax seed
1 tablespoon chia seed
1/3 cup unsweetened coconut flakes
1/2 cup dark chocolate chips
1 teaspoon cinnamon
1 teaspoon vanilla extract
Mix together all ingredients. Form into 1″ balls. Refrigerate until firm. Enjoy! These should keep for a week or longer in the fridge, so make a big batch!
