When it comes to weeknight dinners, I’m all about healthy meals that don’t take long to make – and don’t require many dishes either. Of course, I also want something that tastes intentional and home-cooked. Because, while I love a thrown together plate of protein, carbs, and fruit for lunch, I want a real meal for dinner.
I recently created a Mexican Shakshuka recipe for the Jewish Food Experience and it’s 100% a home run for an easy weeknight, one skillet dinner. Plus, it gives me an excuse to pull out my new cast-iron skillet, which I’m all about now.
Head over to the Jewish Food Experience to check out the recipe and add this Mexican Shakshuka to your repertoire of easy dinners that require ingredients which you probably have on hand more often than not.
