When it comes to weeknight dinners, I’m all about healthy meals that don’t take long to make – and don’t require many dishes either. Of course, I also want something that tastes intentional and home-cooked. Because, while I love a thrown together plate of protein, carbs, and fruit for lunch, I want a real meal for dinner.
MEXICAN SHAKSHUKA
