Almost a year into staying home, it’s about time to start looking for some new work from home lunch ideas, right? I’ve gone through leftovers, deli meat sandwiches, salads, and a lot of SpaghettiOs. But, recently, I’ve caught on to something that is so easy and feels like a midday treat.
Work From Home Lunch Ideas
For the past few months, I’ve been picking up a fresh loaf of bread from Ravenhook Bakehouse at Eastern Market on Tuesdays and Saturdays. No, it’s not cheap, but it’s so much more satisfying than grocery store bread, which means I eat less of it. It’s 100% worth the splurge.*
And, instead of using two slices to make a sandwich, I’ve started creating open-face toast as a way to get in some healthy greens and yummy spreads. It’s a quick, easy way to make a delicious lunch in just a few minutes.
*I’m actually writing a post next week on how buying local has saved us money in our food budget over the long run!
Veggie and Spread Toast Combinations
Here are a few of my favorite work from home lunch ideas and toast combinations to get in a few veggies (yes, I know most of these are technically fruit), a delicious spread, and some seasonings in the middle of the day. Have a favorite toast recipe of your own? Send it my way! I’m always looking for new ideas.
Cucumber and Cream Cheese on Sourdough
A generous spread of cream cheese, thinly sliced cucumbers, and a dusting of everything but the bagel seasoning on sourdough bread is perhaps my favorite daytime meal.
Avocado on Jalapeño Cheddar Bread
When you’re feeling green, mash up some avocado, slather it on a spicy bread, then garnish with cilantro, green onion, radish, and a drizzle of jalapeño sauce.
Hummus and Peppers on Whole Grain Bread
Cut up some bell peppers, maybe a jalapeño, and place them on a bed of creamy hummus. Add a sprinkle of za’atar on top for a mouthwatering lunch.
Almond Butter and Chocolate Chips on Whole Grain Bread
Have a sweet tooth? This is my favorite afternoon snack. Smear on some crunchy almond butter, add a smattering of dark chocolate chips, and add a sprinkle of bee pollen. Sweet and delish.
