To get this post ready to go live, I had to make this microwave chocolate cake at 2 p.m. on a Saturday afternoon. All in the name of blog photographs, right? (Fortunately, this meant I had homemade dessert for the next three meals, and I can’t argue with that.)
A Rich, Easy No-Oven Dessert: Microwave Chocolate Cake
I’ve made this deceivingly easy and incredibly delicious dessert a handful of times over the past few weeks. and it’s become my go-to dessert for weekend evenings where we’ve cooked an elaborate dinner and I’m still craving something sweet. A piece of chocolate won’t do — I want something that feels like it took effort…even if it didn’t. There’s something about a multi-ingredient “baked” dessert that hits the spot in the way that simple ice cream or a cookie never will.
Start to finish, including pulling out the ingredients, this microwave chocolate cake takes less than 10 minutes, and there’s a good chance you have every ingredient already on hand. If you’re feeling fancy, you can finish it off with a drizzle of chocolate liqueur and a dollop of whipped cream. I promise it’s as good as anything you’ll get in a restaurant.

- 1/4 cup flour
- 1/4 cup brown sugar
- 2 tbsp unsweetened cocoa powder
- 1/2 tbsp instant coffee powder
- 1/8 tsp baking powder
- 1/8 tsp salt
- 3 tbsp milk
- 2 tbsp vegetable oil
- 1 tbsp water
- 1/2 tsp vanilla extract

- Mix dry ingredients (flour, sugar, cocoa powder, instant coffee, baking powder, and salt until completely mixed. Add wet ingredients (milk, vegetable oil, water, vanilla extract) and stir completely. Microwave 1 minute and 45 seconds or until baked (err on the side of under rather than over!). This will give you 2-3 servings. Add a dollop of whipped cream or perhaps a drizzle of chocolate liqueur. Enjoy!
