When I posted on Instagram recently mentioning that I’d made protein bites, I received no less than ten messages asking for the recipe. These are so incredibly easy to make and, depending on what I have in the pantry that day, I’ll customize them with nuts and mix-ins. I’ll whip up a batch on Sunday, and they’re perfect for having on hand for middle of the night bites when I’m up pumping or if I need to grab something quick in the morning and don’t have time to make breakfast.
Without further ado, here’s the recipe.
Easy Protein Bites Recipe
1 1/2 cups oats
1 cup peanut butter (I use crunchy)
1/4 cup honey
1 teaspoon vanilla extract
1 tablespoon chia seeds
6 tablespoons chocolate chips (I’ve found mini chips work best!)
Mix together the ingredients in a large bowl. With wet hands (trust me, they need to be wet!), roll the mixture into two-bite size balls. Refrigerate until firm, then keep stored in the fridge.
A few favorite ways I’ve customized: chopped pistachios, cacao nibs, chopped walnuts, nutella in place of 1/4 cup of the peanut butter.
