Pinterest Recipe Week Two: Cookies and Cream Cheesecake Cupcakes

Week Two of my Pinterest Recipe Challenge was a delicious one. For a friend’s birthday, I decided to make Cookies and Cream Cheesecake Cupcakes from the blog Handle the Heat. I don’t even remember how I came across this recipe, but I pinned it a couple years ago; it was one of the first recipes I pinned when I started using Pinterest

It lived up to all expectations. Easy to make, delicious, and a confirmed crowd pleaser. If your birthday is coming up, you can bet there’s a pretty good chance I’ll be making these for you.

Cookie and Cream Cheesecake Cupcakes


21 Oreos (15 whole, 6 crushed)

2 8 ounce packages of cream cheese (room temperature)

1/2 cup sugar

1/2 teaspoon vanilla extract

2 large eggs (room temperature)

1/2 cup sour cream

1/8 teaspoon salt

Preheat oven to 275 degrees. In the bottom of 15 cupcake liners, place an Oreo cookie (I would not try this without cupcake liners!)

Beat cream cheese until smooth (I did not use a mixer!) Add sugar and combine. Mix in vanilla and add eggs, one at a time. Mix in sour cream and salt. Stir in crushed Oreo cookies. 

Fill each cupcake liner with batter almost to the top (forget what you’ve learned about leaving room to rise!) Bake for 22 minutes, or until filling has set. Cool completely while still in muffin tins, then remove to refrigerate for at least 4 hours. Serve chilled. Enjoy!

Also, how adorable is this Mint Julep plate? It came in a set of four appetizer plates with different whiskey cocktails on each one, recipes on the back. The Mint Julep plate seemed most appropriate to use given its race season. While these particular plates are no longer available, Crate and Barrel does have a different set in stock featuring summer cocktails including Sangria, Margaritas, Whiskey Smash, and Daiquiris. I love the idea of giving these as a shower gift along with a bottle of liquor that is used in one of the cocktails.
