Snow Day Breakfast

This recipe seems almost too simple to post. However, a few friends mentioned that me that an insta I posted during the snowstorm inspired them to want to make a big pancake breakfast, but they were out of luck because didn’t have any pancake mix on hand. I decided that meant it was my duty to share the easiest recipe on earth with y’all. No mix required and using ingredients you already have in your pantry.

Also, I’m procrastinating on trying to dig my car out, so making this breakfast again just to take pictures seemed like an excellent idea this morning.

Pancakes makes one serving


1 tablespoon butter, melted

1 egg

1/4 cup milk (I used almond milk)

1/2 cup flour

1 tablespoon sugar

3/4 teaspoon baking powder

Heat a greased griddle over medium heat. 

Stir together butter, egg, and milk. Add in flour, sugar, and baking powder and mix together, only until dry ingredients are moistened and batter is still slightly lumpy. 

Pour pancake mix into griddle and flip as soon as bubbles start to form in batter. Serve warm with real maple syrup (and bacon, duh.) Enjoy!

And now it’s time to end the procrastination and attempt to get that car out of the mountain of snow… and hope that the road is actually plowed. Ugh.
