Google “pumpkin pie breakfast smoothie” and you will get hundreds upon hundreds of results. I took a bit of a bunch of different recipes (like this one and this one) to make a Pumpkin Pie Breakfast Smoothie that used ingredients I already had around the kitchen and seemed relatively healthy.
This was also my first time incorporating medjool dates into a recipe. I’ve heard about them for years as an alternative way to sweeten smoothies and desserts—they will definitely be going into my regular smoothie ingredient rotation.
Pumpkin Pie Breakfast Smoothie
1/4 cup oats
1/2 cup pumpkin puree
1/2 frozen banana
1 cup almond milk
3 Medjool dates, pitted
1/2 teaspoon cinnamon
1/4 teaspoon vanilla extract
1/4 teaspoon nutmeg
1/4 cup ice
Blend oats until finely ground. Add all other ingredients. Blend until smooth. Add more almond milk if necessary for consistency. Garnish with cinnamon on top. Serve immediately.
Tips: You can also add maple syrup or pumpkin pie spice. I haven’t tried it, but I do love a pumpkin-chocolate combo, so I’d imagine that’s a good addition too! Get creative!
